Tomato Chutney
Ingredients:
Half a can of strained tomatoes
Half an onion
Zatar spice
Ground cumin
Salt
Pepper
Sugar
Caramelize half the onion with a little sugar and olive oil in a pan. Add the strained tomatoes and season with salt, a good pinch of pepper, cumin and zatar. Let it boil down briefly and then cool in the refrigerator. Voilà.
Guacamole
Ingredients:
One avocado
Half a shallot
One tablespoon of capers
One teaspoon of lemon juice
Two cherry tomatoes
Chili flakes
Salt
Mash the avocado in a bowl with the lemon juice, chili flakes and some salt. Finely chop the capers and shallot and add them. Also chop the cherry tomatoes into small cubes and add. Chill before serving. Voilà.
Smoked trout paste
Ingredients:
Smoked trout (125g)
Three tablespoons of crème fraîche
One spring onion
2 teaspoons of horseradish
One tablespoon of lemon juice
Black pepper
Red pepper
Salt
Mash the smoked trout together with the crème fraîche in a bowl. Add the lemon juice, horseradish, pepper and salt. Finely chop the spring onion and add it as well. Chill before serving. Voilà.
